Made With • A wholemeal enriched dough, made with an oat porridge, Redeemer wheat and White fife. So tender and buttery, I love this bread for breakfast, a snack or lightly griddled with butter and topped with ice cream for dessert.
Inspiration • I struggled for a long time developing a wholegrain brioche. Finally landing on one with the Taiwanese method of making a porridge to soften the dough and give it a feathery consistency, heavily inspired by my friend Charbel Abrache formula.
